The short answer
Measure the full footprint of the bowls and stands, then choose a mat that leaves room around the drinking and eating edges. A wipeable mat and an absorbent mat handle spills differently. Compare cleaning and drying requirements, and make sure the mat sits flat without becoming an obstacle in your pet's route.
Measure the assembled station
Set the bowls and any stands where you intend to use them. Measure the widest and deepest points of the entire setup, including a fountain reservoir or a stand that extends behind a dish. Then notice where water actually lands: some pets drip in front of the bowl, while others push food sideways.
Mark the proposed mat footprint with a towel or pieces of paper while your pet is elsewhere. Open nearby doors and drawers. A mat that only just holds the bowls may leave the usual spill area exposed; an oversized one may obstruct the walking route.
Decide how you want to deal with water
A wipeable surface lets you remove puddles promptly and see what needs cleaning. An absorbent mat takes in small drips but then needs time to dry. Neither should be left wet underneath. Lift the mat during cleaning so you can inspect the floor rather than simply wiping the visible surface.

Check how the bowls sit on it
Place the station on a level surface and make sure the bowls remain stable. A mat that wrinkles, curls or compresses unevenly can make a stand wobble. Watch your pet approach and step away. If a dog paws at the mat or a cat catches a claw on its edge, change the setup.

Choose a cleaning routine you can maintain
Consider the sink, drying space and spare mat you have available. A large absorbent mat can be awkward in a tiny laundry area. A smaller wipeable mat may be easier to clean after each messy meal, but seams or textured patterns still need attention. Follow the stated washing and temperature limits.
Keep a spare if a mat needs a long drying period. The same rotation principle used for washing dog bedding works here: one clean item in use while the washed one dries completely. Check both sides before returning it to the floor.
Keep the station comfortable for the pet
A neat feeding station does not require putting food and water side by side. Cats in particular may prefer separate water placement. Use two smaller mats if that fits the home and your pet's habits better than one large combined station.
Do not buy extra coverage for a problem you have not observed. Begin with the existing bowls, identify the spill pattern and choose the smallest practical setup that covers it. The useful result is a dry, accessible feeding area that is easy to maintain each day.
